Tzatziki-like Sauce

Tonight we had Marc Angelo Pork Kabobs for dinner. I always like to make a Tzatziki-like sauce to go with it, except I make it with sour cream instead of Greek yogurt. It is really yummy! You can either dip the pork into it, or have it on a pita. Serve with a fresh salad and you end up with a pretty healthy dinner!  It is very similar to the sauce I put on this salmon. (You can even add the green onions/chives if you want.)

Ingredients:
-          ½ cucumber, seeded and grated
-          1 garlic clove, minced
-          ½ cup 1% sour cream
-          1 tsp lemon juice
-          1 tsp dill weed
-          1/8 tsp each fresh ground sea salt and pepper

Directions:
  1. Combine all ingredients in a bowl and mix well
  2. Refrigerate for 15 minutes before use.

Pineapple Glaze for Ham

Last night I made Mac & Cheese and a ham. I had fresh pineapple in the fridge and thought it would go perfect with the ham. However, my husband hates pineapple, so I just added the glaze to my dinner. If you wanted to cook the ham with the glaze, diagonally score ham and pour glaze over. Cook as usual.

Here is the recipe for the yummy glaze I made!

Ingredients:
- 1/4 fresh pineapple, peeled and cut into small chunks
- 2 tbsp butter
- 2 tbsp brown sugar
- 1 tbsp mustard

Directions:
1. Melt butter in a small pot
2. Add pineapple and cook on medium heat for 10 minutes (stirring occasionally)
3. Mix in brown sugar and mustard
4. Remove from heat
