Ingredients:
- Salmon (I usually do a large piece and we just break it up after cooking, but you could easily do 4 portion sized pieces)
- 3 tbsp mayo
- 2 tbsp Parmesan, plus extra for topping
- 1 tsp lemon juice
- Preheat oven to 375*
- Mix mayo, Parmesan and lemon juice. Spread evenly over salmon and top with extra Parmesan
- Bake for 20-30 minutes until fish is flaky
