Parmesan Crusted Salmon

We LOVE salmon!!! I usually bake it in the oven with dill, but I wanted a change. This was amazing!!! Already a repeat in our house :) The crust keeps the salmon so moist and ohhhh soooo delicious!


Ingredients:
  • Salmon (I usually do a large piece and we just break it up after cooking, but you could easily do 4 portion sized pieces)
  • 3 tbsp mayo
  • 2 tbsp Parmesan, plus extra for topping
  • 1 tsp lemon juice
Directions:
  1. Preheat oven to 375*
  2. Mix mayo, Parmesan and lemon juice. Spread evenly over salmon and top with extra Parmesan
  3. Bake for 20-30 minutes until fish is flaky

Lemon-Buttered Halibut

When I was younger my mom use to cook frozen fish in butter and garlic. Let me tell you that stuff was amazing!! I went to Costco last week, and instead of buying salmon, I bought halibut. This recipe is really easy and quick! Makes a pretty yummy piece of fish!

Ingredients:
  • 4 tbsp butter
  • 3 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1/2 tbsp parsly
  • 1/2 tbsp basil
  • 4 peices of fresh halibut
  • salt and pepper
Directions:
  1. In a medium sauce pan on medium heat, melt butter and add lemon juice and garlic. Cook for about 5 minutes and add in fresh herbs.
  2. Put fish in a shallow baking dish. Sprinkle with salt and pepper and cover with butter sauce.
  3. Broil for 10 minutes or until fish flakes easily with a fork.

Cedar Plank Salmon with Dill Sauce

Tonight we had salmon on a cedar plank. This recipe comes from Canadian Living. I pretty much followed the recipe exactly, however we ran out of propane sooo I had to turn to the oven…which I didn’t want to do in this heat!! However it turned out great!

Ingredients:
Salmon:
-          1 cedar plank
-          2 salmon fillets (about 1 lb)
-          2 tbsp oil
-          ½ tsp grated lemon zest
-          2 tbsp lemon juice
-          1 tbsp chopped green onions (or chives)
       -          2 tsp Dijon mustard (I used honey Dijon, it worked just as well)
-          1 pinch each salt and pepper
Dill Sauce:
-          ½ cup sour cream
-          2 tbsp finely chopped cucumbers
-          1 tbsp fresh chopped dill (or ½ tsp dried)
-          2 tsp minced green onion (or chives)

Directions:
  1. Prepare cedar plank by soaking in water for at least 30 minutes and place salmon fillets on top.
  2. In a small bowl, whisk remaining Salmon ingredients together and brush onto fillets.
  3. Place plank on grill over medium-high heat for about 20 minutes (or until fish flakes easily when tested). Occasionally brush with remaining lemon mixture. 
  4. Meanwhile, combine Dill Sauce ingredients in a small bow. Serve salmon with dill sauce.
**Tip: If like me you run out of propane…you can place plank in a preheated 425oF oven for about 15 minutes!!!!

Lemon Herb Salmon

We try to have fish at least once a week. I wanted to try something new, so I was searching for a salmon recipe and found one that someone posted on a chat forum I use (The Nest on Facebook). Apparently it is a weight watchers recipe, but I don’t know the point value. I also added dill to the recipe.

It turned out really good! Usually our salmon is more on the sour side, but this one was both sweet and sour. It will definitely be a repeat!! Although next time I think I will cut the amount of sugar in half. You can either use fresh chopped herbs or dried herbs. I used dried herbs since it was what I had on hand J

Ingredients:
-          4 individual salmon portions
-          Salt and Pepper
-          4 tbsp lemon juice, divided
-          1½ tbsp sugar
-          1 tbsp parsley
-          1 tbsp thyme
-          1 tbsp dill
-          1 tsp lemon zest
-          1 tsp minced garlic
-          1 tsp oregano

Directions:
  1. Preheat oven to 400oF
  2. Season fish with salt and pepper. Place in baking dish (prepared with non-stick spray) and drizzle with 2 tbsp juice.
  3. Whisk remaining ingredients and set aside
  4. Bake fish until tender (~ 13 minutes). Top with lemon/herb mixture and bake for an additional 2 minutes
  5. Optional: Garnish with fresh herbs and zest

Beer Battered Fish

We love fish, and try to have it at least once a week. I do not own a deep fryer (since they are very unhealthy!) but we do occasionally like deep fried food. I have oil that I put in a pot and use to deep fry. I then strain the used oil into a Mason jar and save it until next time. I wanted to make good old beer-battered fish, so I pulled out my trusty Joy of Cooking and found a very easy and yummy recipe! This recipe could be used for pickles, mushrooms, fish, pretty much anything! The recipe called for ¾ cup of beer, but I found the batter was really thick so I used a full bottle of beer. Next time I will try the recipe with 1 cup. I think that would give a nice consistency.
Ingredients:
-          1 cup flour
-          1 tsp salt
-          ¼ tsp black pepper
-          2 eggs (separate yolks and whites)
-          1 tbsp butter
-          1 cup beer
-          1L of vegetable oil
-          Haddock
-          Lemon and freshly ground Sea Salt to taste

Directions:
  1. In a medium bowl blend flour, salt and pepper
  2. In a separate bowl, whisk 2 egg yolks and butter. Add beer.
  3. Pour wet ingredients over dry, and whisk until smooth
  4. Beat 2 egg whites until stiff
  5. Gently fold egg whites into batter
  6. Heat oil to 370oF in a medium pot
  7. Pat fish dry, coat in batter, and drop into oil
  8. Fry until golden brown (about 3 to 5 minutes)
  9. Drain on rack or paper towels
  10. Serve with fresh lemon and sea salt
